Moroccan Fava Bean Puree

INGREDIENTS

o 2 cups large size fava beans, soaked overnight, drained and peeled
o 3 cloves garlic, crushed
o Salt to taste
o 1/2 cup olive oil
o 8 cups water
o 5 T lemon juice
o 2 t cumin
o 1 t paprika
o 1/8 t chili powder
o 1/2 cup chopped parsley

METHOD

Place fava beans, garlic, salt, 4 T olive oil and the 8 cups water in
a saucepan. Cook over medium heat until beans are tender. Drain,
reserving 1 1/2 cups of the water. Place beans with reserved water in
a food processor and blend until smooth. Return to saucepan; stir in
lemon juice and cumin. Cook for 5 minutes over low heat, stirring a
few times, then place on a serving platter. Sprinkle with remaining
olive oil evenly over the top; then sprinkle with paprika and chili
powder. Garnish with parsley and serve.
