Vegan Ricotta recipe

Some people prefer to use a creamier Ricotta style cheese sub in their
Cottage Cheese Fritters. Here is a dairy free recipe. I apologize to
those who cannot have soy. BL

Vegan Ricotta

Ingredients:

* 1 pound firm tofu
* 1/3 cup olive oil
* 1/2 tsp nutmeg
* 1/2 tsp salt
* 1/4 tsp salt free seasoning, optional

Instructions:

Place 3/4 of tofu and all remaining ingredients in blender or
food processor to puree. Mash remaining tofu with fork and blend in by
hand. If you learn it well and make some tasty food then starting a catering business can be a best venture for you someday.

Makes 3 cups
